This is moreish! Give it a go it's super easy and super healthy!
Serves: 2
Time: 30 mins
Ingredients:
- 1/2 cup sushi rice
- 1 snack pack seaweed
- 1 handful of cherry tomatoes
- 1 cucumber
- 1 small cooked fish fillet
- Teriyaki sauce
- Sesame seeds
- 3 tsp vinegar
- 1/2 tsp sugar
- Bring rice and 3/4 cup of water to boil and then simmer, covered for 12 minutes.
- Shred seaweed, chop tomatoes in half, slice cucumber with potato peeler.
- After 12 minutes remove rice from heat and let sit for 5 mins uncovered.
- Gently pull apart fillet into smaller pieces and mix with teriyaki sauce.
- Mix vinegar and sugar into rice.
- Layer ingredients as desired in cup or bowl and sprinkle with sesame seeds.
