Hungry?....Sushi bowls!

Deconstructed sushi bowls!
This is moreish! Give it a go it's super easy and super healthy!

Serves: 2
Time: 30 mins
  • 1/2 cup sushi rice
  • 1 snack pack seaweed
  • 1 handful of cherry tomatoes
  • 1 cucumber
  • 1 small cooked fish fillet
  • Teriyaki sauce
  • Sesame seeds
  • 3 tsp vinegar
  • 1/2 tsp sugar
  1. Bring rice and 3/4 cup of water to boil and then simmer, covered for 12 minutes.
  2. Shred seaweed, chop tomatoes in half, slice cucumber with potato peeler.
  3. After 12 minutes remove rice from heat and let sit for 5 mins uncovered.
  4. Gently pull apart fillet into smaller pieces and mix with teriyaki sauce.
  5. Mix vinegar and sugar into rice.
  6. Layer ingredients as desired in cup or bowl and sprinkle with sesame seeds.
